Anthony and Patrick Murphy, the current owners of Trentham have made a great success of their father's initiative. By linking modern technology to knowledge (Anthony is an oenologist) and extremely serious work in the vineyard, they are among the top producers in the region. The grapes for this characteristic Australian chardonnay come from Murray Darling and are immediately pressed after picking, the juice is cooled and stored at low temperature for a number of days so that the first clarification takes place in a natural way. Part of the harvest of yeast in large 500-liter oak casks and, afterwards, is done at the other part, not fermented on wood. This keeps the beautiful fruit scents of the grape in addition to the subtle and recognizable smell and taste of the oak maturation.
