They now make elegant, world-class wines on the characteristic granite soil in the Dão. A good example is Casa da Passarella, where Paulo Nunes knows how to process grapes into great wines. This Œnologo white is made from the special encruzado grape from 45-year-old vines. The grapes ferment in steel tanks but then mature in small, used barrels of French oak. The powerful wine can easily take that and retains the beautiful aromas of ripe fruit and fresh lemony acidity. Special, intense wine.
