One of the most classic wine regions in Portugal has entered a new phase. Young winemakers have broken with the drying, matured style of the previous generation. They now make elegant world-class wines on the characteristic granite floor in the Dão. A good example is Casa da Passarella, where Paulo Nunes manages to process grapes into great wines. This white organic is made from the special encruzzo grape of 45-year-old vines. The grapes ferment in steel tanks but then ripen in small, used casks of French oak. The powerful wine can easily have that and retains the beautiful aromas of ripe fruit and fresh lemon-like acids. Special, intense wine.
