French white wine with a refined aroma of white fruit flowers and an oak nuance. The taste is balanced fresh and soft. A nice wine with fine fish dishes poultry or veal.
Michel Caillot, who took over 9 hectares of his father's estate in the nineties, is a supporter of a classic Meursault style. Its slope vineyards give a low yield of concentrated grapes that retain a lot of freshness. The style of the wine is similar to finesse and minerality. This is in contrast to the sometimes somewhat greasy and cumbersome style of fellow winemakers who have flat vineyards on more fertile soil at the bottom of the hills. After the manual picking, the fermentations follow in used and partly new oak casks. The ripening is classic with the so characteristic batonnage technique. The wine remains in contact with the sedimentation of the yeast cells for several months. Beautiful culinary top Burgundy.
