Beautiful sparkling wine made the Spanish counterpart of French creams and champagnes of organically grown xarel.lo chardonnay and edellada grapes at the Finca Can Vendrell in Pened̬s. The wine ripens nearly 36 months before the final bottling, in contrast to most Cava that have (at least) 9 months of bottle ripening. Bodega Albet i Noya chose a biological method several years ago. In particular, to greatly limit the use of sulphite and to prevent the formation of bacteria, all attention goes to such a clean and hygienic condition
