What a pleasure to drink these flawless and spicy corbières. Pierre Bories makes in his vineyard of eight hectares in the village of Garrigues - what's in a name? - a beautiful wine from the reviled but potentially great carignan (40%) with fruity grenache (30%) and juicy syrah. Due to the naturally low yield in Pierres vineyards (35-40 hl / ha) the grapes have a lot of concentration.
They are obviously picked by hand and then fermented in the cellar with a short dressing. The vinification is focused on finesse and the avoidance of hard and raw tannin. Partly for this reason, Pierre does not apply oak maturation to preserve the maximum amount of fruit and softness. This is a beautiful corbières with the typical spiciness but also polished and mild. This is due to grapes of excellent quality and the professional way of making wine.
