White rhône can sometimes be log and flat in taste. The idiosyncratic winemaker Michel Gassier radically changes this image: he brings freshness and finesse into his costières de nîmes.
Michel picks the grenache blanc- (60%) and roussaintruiven (40%) asked what fresh acid ensures. Then he applies cold induction before fermentation. Then he lets the young wine ripen for eight weeks on the elaborate yeast cells that are regularly stirred.
In technical terms, this method is called bâtonnage: a technique from Burgundy that is practically applied systematically. The result is a fresh but also juicy and round dry white wine with lots of aromatic refinement. Strongly different from the great Sauvignon-Chardonnay offer and highly recommended!
Michel Gassier has since switched to organic farmers and from the harvest of 2013 all his wines are certified organic.
