Reserva Sauvignon Blanc
Delicious fresh dry white wine from Chile with the scent of juicy fruit and nuances of boxwood and citrus. The taste is balanced and fresh. Great aperitif but also delicious with summer salads and fish.
Elqui River in Chile
Textbook example of flawless sauvignon from Chile. The hand-picked grapes come from the Titon vineyard at an altitude of about 350 meters and 20 kilometers from the cool ocean. The big difference in day and night temperatures ensures that the grapes retain an invigorating freshness.
Immediately upon entering the cellar, the peel is soaked in the juice, this takes about 12 hours. After the gentle pressing, the juice remains in the refrigerator for 72 hours, after which the fermentation starts at a low temperature. After fermentation, the young wine remains in contact with the yeast residues for some time. This brings fresh taste notes and a round, creamy character.
Falernia the success of two Italians in Chile
Born in Trentino, Italy, Aldo Olivier started Viña Falernia in 1997 with his cousin and fellow countryman Giorgio Flessati. A special initiative because they manage the most northerly vineyards in Chile. These are located in the Elqui Valley near the city of La Serena, more than 500 kilometers north of Santiago.
One day later it turned out to be a very suitable region for producing aromatic and fresh wines. During the day it is warm but at night it cools down sharply due to the ocean wind from the west or cool mountain air from the Andes from the east. This gives the grapes an intense aroma and taste and they retain refreshing acidity.
The experienced Flessati saw fantastic opportunities for the vines already present - the grapes were used exclusively for pisco distilled grape wine - and became the first wine producer in this 'forgotten' region.
Falernia's wines have now become more famous and there is recognition for their excellent quality. Flessati even introduced the 'appassimento method', well-known in Northern Italy. Part of the harvest is dried so that the flavor concentration increases sharply. The addition of this part to fermenting red wine produces a significantly fuller and smoother taste.
