Falernia, Italian success in Chile.
|EAN:||Viña Falernia Elqui Valley Sauvignon Blanc|
Delicious, crisp white wine from Chile with the smell of juicy fruit and shades of boxwood and citrus. The taste is balanced and fresh. Fine appetizer but also delicious with summer salads and fish.
School example of flawless sauvignon from Chile. Hand-picked grapes come from the Titon vineyard at a height of 350 meters and 20 kilometers from the cool ocean. The big difference in day and night temperature ensures that the grapes retain an invigorating freshness.
Immediately upon entering the cellar, the skin is soaked in the juice, which takes about 12 hours. After the soft pressing, the juice remains in the refrigerator for 72 hours after which the fermentation starts at low temperature. After the fermentation, the young wine remains in contact with the yeasts for some time. This brings fresh taste notes and a round, creamy character.
Falernia the success of two Italians in Chile
Aldo Olivier, born in Trentino, Italy, started Viña Falernia in 1997 with his cousin and fellow countryman Giorgio Flessati. A special initiative because they manage the most northerly vineyards in Chile. These are located in the Elquivallei near the city of La Serena more than 500 kilometers north of Santiago.
An afterwards proved very suitable area for producing aromatic and fresh wines. During the day it is warm but at night it cools down strongly due to the ocean wind from the west or cool mountain air from the Andes from the east. This gives the grapes an intense aroma and taste and they retain refreshing acid.
The experienced Flessati saw fantastic possibilities for the already present grape vines - the grapes were exclusively used for pisco distilled grape wine - and became the first wine producer in this 'forgotten' region.
In the meantime the wines of Falernia have become better known and there is recognition for the excellent quality. Flessati even introduced the 'appassiment method' known in Northern Italy. Here a part of the harvest is dried so that the taste concentration increases strongly. The addition of this part to fermenting red wine gives a significantly fuller and softer taste.
