Nice example of a modern made new-world Chardonnay with a full greasy taste and recognizable oak maturation.
The Azucena of Viña Peñablanca is a textbook example of an excellent quality Chilean chardonnay. The grapes come from the relatively cool region Casablanca about 45 kilometers from the ocean. The cold Antarctica-sourced Humboldt stream provides a mild climate in the Casablanca Valley. Combined with dry and sunny weather conditions this ensures excellent conditions under which the chardonnay grapes ripen optimally.
Harvesting is done manually in the cool morning so that the maximum fruitiness is maintained. In the cellar there is a smooth pressing and - after a short period of rest - the alcoholic fermentation. The wine ripens partly in French oak casks, where the yeast cells are not removed. The result is an excellent wine with the distinctive new world-smoldering.
