French dry white wine with the aroma of tropical fruit, slightly toast and ripe apple. The taste is fresh, juicy, balanced and aromatic. Delicious as an aperitif, but also a good match with cold fish or shellfish.
Michel Gassier shows his craftsmanship with this refreshing and culinary wide white wine: A Cappella. In search of a southern French equivalent of the mild-dry German riesling wines, he came up with a combination of the rich, opulent taste of viognier grapes with the slender, fresh-fruity character of the colombard. After the manual picking, the perfectly ripe grapes are crushed and slightly bruised. The peels then remain in contact with the juice for 12-48 hours for the extraction of aromas. This is followed by fermentation in stainless steel tanks and assembly to achieve a beautiful harmony of fruit and freshness. The result is particularly successful: an intensely fragrant white wine with notes of yellow fruit and a fresh taste. Delicious as an aperitif or in combination with spicy Asian (fish) dishes.
