Castelo de Medina VS Sauvignon Blanc

Beautiful dry white wine with the characteristic aroma of fresh boxwood notes, citrus and nice toast aromas. The taste is dry and fresh in texture and ends with a fragrant and persistent aftertaste.

Rueda, Sara Román

The Spanish Castelo de Medina is known as a producer of modern, fresh white wines with an expressive aroma and taste. Top features of good quality rueda. Winemaker Sara Román has recently started making a rueda with more complexity in taste and less emphasis on exuberant scents. The result is a white wine that is made in a distinctive way and thus exceeds the level of 'normal' rueda.



For the 'vendimia seleccionada' - or exclusive harvest - Sara selected the oldest vineyards with sauvignon grapes and drastically limited the yield. She did this through strict pruning and a green harvest, up to 30% of the amount allowed for rueda.

She also made a selection of the most ripe and healthy grapes during the harvest. After picking and temperature-controlled fermentation, a maturation of about eight months followed in yeast cells. This provides more complexity and structure. And that is clearly reflected in this special, dry white sauvignon: lots of flavor, refinement and length.

The 'sur lie' ripening means: ripening on yeast. This wine technique, originally French, is now used worldwide and provides more complexity and taste. This technique only has a positive effect if the harvested grapes are in perfect condition; thus optimally ripe and without fungi. Hence the strict selections in the vineyard.
