Luis Anxo is one of the protagonists and main producers of Ribeiro in Galicia. At a time when the focus had shifted mainly to volume and mostly palomino and garnacha tintorera were planted for the production of bulk wines, Anxo decided to return to the traditions of his great-grandparents in North-West Spain.
When he started in 1988 as a colleiteiro (a small winegrower who sources his grapes entirely from his own vineyards), he first replanted his 5 hectares of vineyards with traditional, local grape varieties. He then started to produce beautiful wines in a small-scale, traditional way. And he hasn't stopped doing that to this day.
This white Os Pasás makes Anxo from treixadura, albariño, lado and torrontés, planted in steep, tiny terrace vineyards on granite soils with particularly low yields. After the manual harvest, there is spontaneous fermentation in stainless steel tanks in the cellar and maturation on the yeasts. The wine is bottled without filtering and clarification to preserve as much flavor as possible.
It produces this extraordinarily original, pure and authentic white wine, with subtle notes of stone fruit, blossom and salty minerality, a beautiful creamy structure and a lingering aftertaste. This calls for oysters, shells or really anything that comes from the sea. Splendid!
