Sauvignon Blanc has its distant origins in southwestern France. Together with the Semillon and Muscadelle, it forms the basis for white Bordeaux. Although it is a precocious grape variety, harvesting it too early can make it appear harsh with aggressive, unripe acids and an abundance of green pepper and cat pee aromas. The best specimens are fresh, lively and juicy in taste and often have an intense aroma that literally sprays from the glass.
Recognizable aromas : (green fruit (apple, kiwi, gooseberry); citrus (grapefruit, lemon, lime, orange); vegetables (asparagus, paprika); plants (grass, boxwood) herbs (mint, sage, parsley) animal (cat pee) In the New World and in warm years in cool regions often also exotic fruit (melon, pineapple, mango, peach).
