Camille Ournac's great passion for Pinot Noir is reflected in this magnificent quality. He applies the techniques used by the best winegrowers in Burgundy to make their top wines. It almost goes without saying that he picks by hand and mistakes part of the harvest in a very traditional way by trampling on the whole bunch of grapes, including stems.
In this way it gently extracts color and delicate flavors from the grape. The second fermentation and the ten-month maturation then take place in new oak casks from the famous Francois Frères cooperative from Burgundy. The style and quality of Ournac's Pinot Noir is rarely found in the South of France, where producers usually make a much less Burgundy-like wine.
 
Camille's Tasting Note reports: 'Light color with fresh aromas of cherries, kirsch, spices and luxurious oak. The taste is full of very smooth tannins, beautiful cherry fruit, oak toast and freshness. A refined wine with a beautiful complexity '.
We fully agree with that. What a quality! Interesting detail: the provocative drawing on the label was made by one of Camille's ancestors, who was a cartoonist for a southern French political newspaper at the end of the 19th century.
