Tasting note
Fresh dry white wine with an aroma of green apple, some honey and light floral nuances. The taste is round and juicy and ends aromatically with a refreshing acidity. Excellent summer aperitif, easy to combine with cold salads or shellfish.
Description
Like his red Sous le Bouchon, Pierre Bories also makes his white Corbières as natural as possible. He farms his vineyards organically and harvests the grapes by hand. Pierre opts for a yield of 35 hectoliters per hectare, very low for white wines. This results in the warm Corbières in perfectly healthy and flavoursome grapes, and thus in concentration in the final wine.
Prior to fermentation, Pierre soaks the grapes at a low temperature with the skins. This makes the aromatic subdued Roussanne, Marsanne and Grenache Blanc more intense and seductive. Then the grapes fermented without any additives in stainless steel tanks.
It produces a delicious, pure, Mediterranean wine in the style of a beautiful white Rhone. The Sous le Boucon ('under the cork') has aromas of ripe white fruit, and a juicy, mild, concentrated taste.
