Deep red, intensely fruity wine with aromas of plum, blackberry and black currant supplemented with southern French garrigue spiciness. Culinary versatile, for example with savory snacks, casseroles with vegetables or grilled chicken. Shelf life up to two to three years after harvest date.
Pierre Bories, the talented winemaker of Domaine Le Champ de Murailles in the Corbières, makes this Sous le Bouchon ('under the cork') in the most natural way possible.
The carignan, grenache and syrah come from organically cultivated vineyards and are picked by hand. Then, in the cellar, the fermentation starts with the yeast cells that are on the skins of the grapes - the so-called 'wild' yeasts. After this Pierre refrains from the usual clarification and filtering. The natural settling in the tank ensures that this red wine becomes clear.
In addition, Pierre does not add sulfite. However, this drug is permitted in wine and is also used in organic and biodynamic wines. The challenge for the winemaker is to use as little as possible, so that there is no visible influence on the smell and taste of the wine.
Pierre's Corbières has a pure scent of all kinds of red and black fruit and has a full, ripe fruit taste, with soft tannins. Very distinctive! Pour the Sous le Bouchon preferably slightly chilled, between 12 and 14 degrees.
