Deep red, intensely fruity wine with aromas of plum, blackberry and black currant supplemented with southern French garrigue spiciness. Culinary wide use, for example with savory snacks, oven dishes with vegetables or grilled chicken. Shelf life up to two or three years after harvest date.
Pierre Bories, the talented winemaker of Domaine Le Champ de Murailles in the Corbières, makes this Sous le Bouchon ('under the cork') in the most natural way possible.
The carignan, grenache and syrah are from organically processed vineyards and are picked by hand. Then, in the cellar, the fermentation starts with the yeast cells on the skin of the grapes - the so-called 'wild' yeasts. After this Pierre abandons the usual clearing and filtering. The natural sedimentation in the tank ensures that this red wine becomes clear.
Moreover, Pierre does not add sulphite. This agent is also permitted in wine and is also used in organic and biodynamic wines. The challenge for the winemaker is to use as little as possible, so that no influence on the aroma and taste of the wine is perceptible.
Pierre's Corbières smells pure of all kinds of red and black fruit and has a full, ripe fruit flavor with soft tannin. Very distinctive! Pour the Sous le Bouchon preferably lightly cooled, between 12 and 14 degrees.
