Tasting note
Deep red, intensely fruity wine with aromas of plum, blackberry and blackcurrant supplemented with southern French garrigue spiciness. Can be used for many culinary purposes, for example with savory snacks, casseroles with vegetables or grilled chicken. Shelf life up to two to three years after harvest date.
Description
Pierre Bories, the talented winemaker of Domaine Le Champ de Murailles in the Corbières, makes this Sous le Bouchon ('under the cork') in the most natural way possible.
The Carignan, Grenache and Syrah come from organically farmed vineyards and are picked by hand. Then, in the cellar, fermentation starts with the yeast cells found on the skin of the grapes – the so-called 'wild' yeasts. After this, Pierre refrains from the usual clarification and filtering. The natural sedimentation in the tank ensures that this red wine becomes clear.
Moreover, Pierre does not add sulfites. This product is permitted in wine and is also used in organic and biodynamic wines. The challenge for the winemaker is to use as little as possible, so that there is no noticeable influence on the aroma and taste of the wine.
Pierre's Corbières smells purely of all kinds of red and black fruit and has a full, ripe fruit flavor, with soft tannins. Very distinctive! Preferably serve the Sous le Bouchon slightly chilled, between 12 and 14 degrees.
