Information

El Oso y la Alemana Verdejo

The old vines (pie franco) stand like bushvines on the sandy soils. The grapes come from our farmers in Morales de Toro, Villaester and El Pego. The Verdejo grapes are harvested by hand in boxes of 17 kg. Then a slow and natural fermentation takes place, the wine matures in French oak barrels and winemaker Aurol chooses bâtonnage for 6 months. The wine is bottled unfiltered.
The result? An intense and tasty white Toro. Good freshness, powerful and full of character. It conveys the sand, the heat and the power of the Verdejo and the elegance of the little bit of Malvasia.

Máquina & Tabla

Máquina & Tabla is a project by the young couple Oriol Illa and Susana Pastor. They work with small and old vineyards throughout Castilla y León. The name and labels refer to the struggle between nature and culture. Nature is wild and free and after some beautiful cycles, death is always the end point. The landscape, the grapes, the fermentation of the must and the élevage are marked by human intervention at the right time and in the most gentle way to finally obtain a wine that best reflects its landscape, its grapes and human intervention. Máquina means 'Machine' - the human factor, and 'Tabla' is a piece of wood - nature. Human interventions determine nature.

This small project started in 2012. Oriol was previously an oenologist at several small projects and domains in Catalunya and Castilla y León. Susana was previously active in the art and music world and is the basis of the original presentations.

Their wines have been very popular in the small world of Spanish sommeliers from the very beginning. They therefore only use small plots of old vines, which they sometimes searched for a long time before being convinced of its potential. They work completely biodynamically and without the addition of sulphites.
