Strawberries and yogurt bavarois

Ingredients:

  • 200 grams of strawberries
  • 200 grams of Greek yogurt
  • 4.5 leaf of gelatin
  • 50 grams of granulated sugar
  • 1 protein from an organic egg
  • 1/2 lemon
  • 1 rhubarb stem
  • Fine cristalsugar
  • Flowers

 

Morning:

  • Mash the strawberries and soak the gelatin in cold water for 5 minutes
  • Gently melt the gelatin in the microwave with a tablespoon of strawberry puree
  • Mix the strawberry puree and gelatin, stir in the yogurt
  • Beat the egg whites in a degreased bowl with the granulated sugar
  • Fold in the egg white with a spatula, divide over 4 coffee cups and cover well

 

Just before eating:

  • Peel the rhubarb, cut into cubes and pass through the fine granulated sugar
  • Garnish the bavarois with the rhubarb and flowers
