Most popular blue grape in the world. The Cabernet Sauvignon ripens late and has relatively small grapes with a thick, almost black skin. In northern regions there are sometimes problems with ripening, resulting in vegetable tannins and a vegetable or paprika-like smell and taste. In Bordeaux it is only found in combination with Merlot and Cabernet Franc. Characteristic properties are a lot of color, odor and tannin.

Recognizable aromas: black fruit (blackberry, black currant, black cherry, blueberry); red fruits (red currant, cherry); dried fruits (plum, raisin, fruit jam); vegetables (paprika), spices (liquorice, tobacco) herbs (mint), wood (cedar wood, vanilla, cigar box, pencil shavings, oak wood); roasted (smoked, coffee, cocoa, chocolate).
