Description
Who better than a skilled Bourguignon to make a fine Chardonnay in the South of France? Laurent Delaunay, a scion of a Burgundy wine family, purchased the small boutique winery of the talented Australian Nerida Abbott in the village of Marseillette in 2005 and has since expanded the range.
The oak-aged Chardonnay is Delaunay's signature wine. He selects grapes from higher-elevation plots in regions such as the Cévennes and Limoux. He ferments a third of the yield in new oak barrels. This portion also undergoes the secondary fermentation so characteristic of Burgundy.
Laurent then blends the oak-fermented wine with the stainless steel-fermented wine. Finally, he allows the final blend to age "on lie" for another nine months, with periodic batonnage. The result is a beautifully crafted Chardonnay with delicious oak notes and a full, smooth flavor.
