Description
Josef Fischer (born 1989) may be a young winemaker, but he's anything but impetuous and reckless. If you ask Josef, good wines are made with time and patience.
He harvests the Grüner Veltliner for this elegant Federspiel from several of his Rieds, or "single vineyards," in Rossatz, located on the south bank of the Danube River. The vines are up to 25 years old and are planted in various soil types (loam, sandstone, and gravel). Josef cultivates the vineyards sustainably.
Once harvested, minimalist vinification follows. Josef allows the grapes to ferment spontaneously in stainless steel tanks. Once fermentation is complete after about four weeks, the wine rests on the yeasts for several months before bottling.
This method produces a pure, characteristic Wachau-Grüner, with notes of apple, pear, and anise, juicy freshness, and a beautifully lingering, dry finish. Delicious as an invigorating aperitif and at the table.
