Description

The signature of master winemaker Riccardo Cotarella is clearly evident in this seductive Chianti, with its remarkable refinement, freshness, and drinkability. This is Chianti at its finest in this class.

The When We Dance is generally made without wood aging, mainly from Sangiovese, supplemented with a little Canaiolo and Colorino.

From the 2022 harvest, 20% of the Sangiovese was briefly aged in oak barrels. To optimally preserve the fruity cherry and berry aromas and the mild, fresh flavor of the Sangiovese, Cotarella recommended a short maceration on the skins for the remaining Sangiovese, just enough to achieve its light red color, and a six-month aging period in stainless steel tanks.


The result is a refined, spicy red wine that pairs beautifully with many classic Italian dishes. Best enjoyed at around 17 to 18 degrees Celsius.

Villa Il Palagio has been Sting and his wife Trudie Styler's holiday home in Tuscany for over 20 years. The famous couple has completely restored the ancient vineyards and certified them organic. Biodynamics are also used throughout the entire process, from grape to wine.

The cellar has seen a significant leap in quality since the 2019 harvest, under the influence of Riccardo Cotarella. He champions a minimalist approach to winemaking, which aligns well with Sting and Trudie's philosophy of producing with respect for nature.
