Tasting note Monte del Frá Monastero
Italian white wine from dried grapes with the scent of apricot candied fruit and jam. The taste is intensely sweet but nice and fresh. Delicious with desserts with chocolate or blue cheese.
Description
The northern Italian Veneto has a long tradition of making Passito wines. The process works as follows; the harvested grapes are not directly fermented but are set aside from the end of September so that they can dry out. The grapes are not pressed until February. These shriveled grapes then have a great taste and sugar concentration. The skins ferment slowly with the juice for at least 15 days and give beautiful very ripe fruit flavors. Fermentation then continues on small oak casks where the wine matures for about 12 months. Monte del Frá uses the grape varieties Garganega (60%) Cortese 10% and 15% each for Sauvignon and Chardonnay. The result is a particularly sweet, high-quality wine.
