Tasting note Monte del Frá Monastero
An Italian white wine made from dried grapes with aromas of candied apricots and jam. The flavor is intensely sweet yet refreshing. Delicious with desserts featuring chocolate or blue cheeses.
Description
Northern Italy's Veneto region has a long tradition of producing Passito wines. The process works as follows: the harvested grapes are not fermented immediately but are set aside from late September onwards to allow them to dry. The grapes are not pressed until February. These shrivelled grapes then develop a rich flavor and high sugar concentration. The skins ferment slowly with the juice for at least 15 days, imparting beautiful, very ripe fruit aromas. Fermentation then continues in small oak barrels, where the wine is aged for approximately 12 months. Monte del Frá uses Garganega (60%), Cortese (10%), and 15% each of Sauvignon Blanc and Chardonnay. The result is an exceptionally sweet, high-quality wine.
