Description
The Burgundian tradition of making elegant, refined wines is clearly present in this Merlot. Laurent Delaunay, producer of exclusive white and red Burgundy, also seeks drinkability in his Southern French wines.
He achieves this by harvesting grapes with a perfect balance between freshness and ripe notes. It is a matter of sufficiently limiting yield in the vineyard and planting vines in relatively cool spots.
The expert vinification in this case is a blend of traditional fermentation and carbon dioxide maceration, a method widely used in Beaujolais. After blending, a portion of the Merlot remains in oak barrels for six to nine months.
The result is a remarkably accessible, smooth, and easy-drinking Merlot with a refined influence of oak, which stands out significantly in the selection.
