Description
The Burgundian tradition of making elegant, refined wines is clearly present in this Merlot. Laurent Delaunay, producer of exclusive white and red Burgundy, is also looking for drinkability in his southern French wines.
He achieves this by harvesting grapes with a perfect balance between freshness and ripe notes. A matter of limiting the yield in the vineyard sufficiently and planting grapes in relatively cool places.
The professional vinification in this case is a mix of traditional fermentation and carbon dioxide soaking, the method often used in Beaujolais. After assembly, part of the Merlot remains in oak barrels for six to nine months.
The result is a remarkably accessible, smooth and drinkable merlot with a refined influence of oak, which is very distinctive in the range.
