Description
Txakoli, txakolina, or chacolí is the white specialty of the Spanish Basque Country and a popular wine to serve in the tapas bars of San Sebastián and Bilbao. However, the wines of the best producers are also finding their way into the finer gastronomy, such as those of Doniene Gorrondona.
It's made from hand-harvested Hondarrabi Zuri grapes in the Bakio subregion, which ferment spontaneously. This small region, with a strong cooling influence from the ocean, is known for wines with a wonderful balance of freshness and ripe flavor notes.
Good Txakoli is no longer comparable to the old style, a slightly tingling, tart wine with low alcohol and ripeness. The juicy and beautifully fragrant Doniene Gorrondona is aged for six to nine months on the lees and can be described as a cross between a good, mature Muscadet and a juicy Albariño.
Serve it with fresh salads, grilled fish, mussels or as an exceptionally original aperitif.
