Txakoli, txakolina or chacolí is the white specialty of the Spanish Basque Country and the popular pouring wine in the tapas bars of San Sebastián and Bilbao. However, the wines of the best producers also penetrate the better gastronomy. Like this one by Doniene Gorrondona.

It is made from hand-picked hondarrabi zuri grapes in the Bakio sub-region, which ferment spontaneously. This small area with a lot of cooling influence from the ocean is known for wines with a beautiful balance between freshness and ripe taste notes.

Good Txakoli can no longer be compared to the old style, slightly pungent, fresh sour wine with little alcohol and maturity. The juicy and beautifully fragrant Doniene Gorrondona ripens 'sur lie' for six to nine months and can be characterized as a cross between a good, matured Muscadet and a juicy Albariño.

Serve it with fresh salads, fish from the grill, mussels or as an exceptionally original aperitif.
