From the native aleatico grape

Maturing in small wooden barrels
 
The passito from Cantine Due Palme, our popular wine supplier from southern Italy, is a traditional Apulian speciality. It is a sweet wine made from the local blue aleatico grape. The secret of this dessert wine is that the grapes first dry on the vine and then again on graticci, a kind of straw mat.

The aleatico grapes are harvested late in the season, by hand. Then winemaker Angelo Maci lets the grapes dry on the graticci. This ensures an enormous concentration of taste with typical, floral nuances of the aleatico grape and notes of honey. After fermentation, this dessert wine matures in small wooden barrels. This creates a complex aroma of nuts and coffee.

Drink this southern Italian specialty, for example, with cantuccini, figs, sweet chocolate desserts or simply after a meal, as a dessert in itself. It is best to serve it slightly chilled to accentuate the freshness of the wine.

Tasting note
Bright red in color with some development. In the scent candied fruit, currants and spiciness. The round, mildly sweet taste ends with a fragrant lingering aftertaste and a fresh undertone.
