Description
The successful and innovative Apulian producer Cantine Due Palme makes a deliciously fresh sparkling wine from the Negroamaro grape. This "pride" of Apulia produces full-bodied, powerful red wines with standard vinification, but through an early harvest, direct pressing, and fermentation without the skins, Due Palme transforms it into a white "spumante." Making white wine from red grapes is possible because the skins, not the pulp, contain the pigments for red wines.
The term "extra dry" may be misleading, suggesting a particularly dry flavor. However, that's not true. The driest spumante variety is called "brut," followed by "extra dry" and "dry," with the latter, oddly enough, being the least dry.
