Description
Manu Venturi's red Le Bois du Cerf is a textbook example of a fine Corsican red wine. It is light in color, has a refined aroma of red fruit and herbs, and has an elegant, fresh, juicy, and dry taste.
It's the surprisingly cool temperatures in the higher-elevation vineyards that make it possible to produce wine with an almost northern finesse. Manu is also a passionate nature lover, fosters a high level of biodiversity on his estate, and practices organic and biodynamic practices almost as a matter of course.
The traditional Corsican grapes Niellucciu, Sciaccarellu, and some Syrah define the wine's character. The Italian influence on the island is evident in the Niellucciu grape, which is related to Sangiovese and was planted by Italians in the distant past.
After hand-picking, fermentation takes place in concrete vats using wild yeasts. Manu then ages the wine there for another twelve to eighteen months, after which he bottles it unfined and only lightly filtered. A characteristic Mediterranean island wine!
