Description
The white Le Bois du Cerf, made from 100% vermentinu (also known as vermentino and rolle), stands out positively in the growing range of wines from this Mediterranean grape. Depending on the terroir and the method of the winemaker, there are considerable style differences.

Producer and Corsica ambassador Manu Venturi makes a gossamer, dry variety with tension and juiciness. His love for Corsican nature and biodiversity is almost self-evident in organic certification and even biodynamic farming.



Manu harvests the top-quality grapes by hand in low-yielding high-altitude vineyards. Once in the cellar, he lets them ferment in concrete vats without adding yeast cultures. The resulting wine is left to mature for another six months on the lees, before bottling it unclarified and only slightly filtered.

This minimalist approach produces a beautiful, pure white wine with maximum fruit and terroir expression. Delicious as an aperitif or accompaniment to fresh fish from the oven.

Delicious with light fish dishes, pasta with shellfish and Mediterranean salads.
 
Tasting note
Dry white wine with a refined scent of white flowers, apple, quince, lemon zest and anise. Intensely juicy taste with nice flexibility and mild acids. Lingering finale with ripe pear fruit, toast and almond.
