Information

Originating from the special wine region of Valle Isarco in Alto Adige
From grapes harvested in extremely steep, high-altitude vineyards
Distinctly fragrant, with a full, juicy flavour

Description

The unique terroir of Valle Isarco, in the northern Italian wine region of Alto Adige, clearly reveals itself in the exquisite Aristos series from the young but renowned Eisacktal winery. Take, for example, the magnificent Sauvignon Blanc.

The cantina harvests the grapes for this wine in exceptionally steep, high-altitude vineyards in the wine village of Campodazzo, in the southern Isarco Valley. The altitude ranges from 600 to 720 meters, and the slopes reach an impossible 50%. Therefore, the grapes can only be harvested by hand.

Once in the cellar, winemaker Hannes Munter crushes the grapes, briefly macerates the skins, and then gently presses the grapes. After fermentation at a controlled temperature, he allows the wine to mature with the yeasts for another ten months, partly in stainless steel tanks and partly in wooden barrels.

It produces a fantastic, richer style of Sauvignon Blanc, with a particularly expressive aroma of citrus, nectarine, mandarin, green herbs, and brioche. The flavor is intense, concentrated, and juicy. Enjoy this beautiful white wine as an aperitif or with a wide variety of dishes.

Drinking at

A lively, fresh, and juicy white wine to enjoy as an aperitif or with refined (fish) dishes. It pairs beautifully with asparagus and smoked salmon, fish salads, or soft (goat) cheeses.

Tasting note

A pale yellow wine with expressive aromas of Granny Smith, passion fruit, mandarin, brioche, and mint. Intense flavor with a lovely body and good freshness. The finish is lingering with notes of toast and almond.

Shelf life

Beautiful now; easily kept for up to 5 years after harvest.
