Description
The fact that the special terroir of Valle Isarco in the northern Italian wine region of Alto Adige produces unique wines is clearly reflected in the beautiful Aristos series from the young but renowned wine company Eisacktal. Now take the beautiful Sauvignon.
The cantina harvests the grapes for this wine in particularly steep and high-altitude vineyards in the wine village of Campodazzo, in the south of Valle Isarco. The height varies between 600 and 720 meters and the slope increases to an impossible 50%. The grapes can therefore only be harvested by hand.
Once in the cellar, winemaker Hannes Munter crushes the grapes, allows the skins to soak briefly and then presses the grapes softly. After fermentation at a controlled temperature, he lets the wine mature for another ten months with the yeasts, partly in stainless steel tanks, partly in wooden barrels.
It produces a fantastic, richer style Sauvignon, with a particularly expressive scent of citrus fruit, nectarine, mandarin, green herbs and brioche. The taste is intense, concentrated and juicy. Drink this beautiful white wine as a nice aperitif or with many dishes at the table.
Drink with
Lively fresh and juicy white wine to drink as an aperitif or with refined (fish) dishes. Great with asparagus with smoked salmon, salads with fish or soft (goat) cheeses.
Tasting note
Pale yellow wine with expressive aromas of Granny Smith, passion fruit, mandarin, brioche and mint. Intense in taste with a nice filling and good freshness. The aftertaste is persistent with notes of toast and almond.
Shelf life
Now beautiful; easy to keep for up to 5 years after harvest.
