Description

Florent Rouve makes wine in the Jura with inspiration from Burgundy. And you can taste that in this En Paradis. What an incredibly beautiful, flawless and very tasty Chardonnay!

What distinguishes Rouves Jura's from many others is that he does not make his wines in the traditional, oxidative way. In this process, the wines ripen in contact with oxygen, which gives them aromas and flavors of roasted nuts and bruised apples. François, on the other hand, makes them exactly like in Burgundy: pure, terroir-typed and with minimal intervention.



He harvests the grapes for this En Paradis in the plot of the same name with old vines planted on clay soils (marnes bleues). The relatively cool location provides a lot of freshness and aromas in the grapes, which gives the final wine a strikingly beautiful tension and finesse.

After the manual harvest, Florent ferments the Chardonnay grapes using grape yeasts in oak barrels. The wine then matures on the yeasts for a further sixteen months. Florent does not apply a batonnage to keep the wine as unprocessed as possible.

And he succeeded wonderfully. The En Paradis cuvée is crispy, pure and mineral, with an exciting freshness and at the same time a particularly seductive creamy character and a luxurious oak touch. Whoever drinks this beautiful wine can indeed imagine themselves effortlessly in paradise.

 

Drink at
Great with poached (freshwater) fish, but also, for example, with chicken with cream sauce.

 

Tasting note
Bright yellow in hue with a refined aroma of ripe apple, toast and oak. The full, round taste has a balanced structure and ends with a fragrant and fresh aftertaste.

 

Shelf life
Ready to drink from 2 years after harvest, easy to keep for 4 to 5 years
