A fruity and refreshing French red wine with a distinctive aroma of fresh cherries and red fruit. The palate is fresh and elegant. Delicious with cold charcuterie platters or hot poultry or veal dishes.

Description

Xavier and Guillemette Besson own 85 hectares of vineyards around Givry, a quarter of which is Chardonnay and three-quarters Pinot Noir. Since 1989, they no longer sell to retailers but produce exclusively from their own vineyards. Le Haut Colombier is a blend of various Pinot Noir plots, primarily adjacent to the premier cru Le Petit Prétan.

The vineyards' eastern and southeastern exposure ensures optimal ripening of the grapes. The grapes are hand-harvested, carefully crushed, and fermented at precisely controlled temperatures to preserve maximum fruit. Maturation takes place in oak barrels, a maximum of half of which are replaced annually. The result is a beautifully fruity and accessible red Burgundy.
