Fruity and fresh French red wine with a recognizable aroma of fresh cherries and red fruit. The taste is fresh and elegant. Delicious with cold dishes with charcuterie or warm dishes of poultry or veal.
Description
Xavier and Guillemette Besson own 85 hectares of vineyards around Givry, a quarter of which are chardonnay and three-quarters of pinot noir. From 1989 they no longer supply to the trade but only produce from their own vineyards. Le Haut Colombier is an assemblage of various parcels of pinot noir mainly adjacent to the premier cru Le Petit Prétan. The eastern and southeastern location of the vineyards ensures optimal ripening of the grapes. The manual harvest is carefully bruised and fermented at carefully controlled temperatures to maintain maximum fruit. Maturation takes place in an oak barrel, of which up to half is renewed annually. The result is a beautiful fruity and accessible red burgundy.
