Tenuta Olim Bauda
The vineyards of Tenuta Olim Bauda are located in the warmest part of the region. This helps ensure the grapes reach full ripeness. This is crucial, as the Barbera grape develops a harsh, unpleasantly acidic flavor structure when underripe. The grapes from the 'La Villa' plot are hand-harvested in the first half of October. Immediately upon arrival at the cellar, a strict selection process takes place, and the grapes ferment in stainless steel tanks. Maturation also takes place in these tanks; oak aging is not used, allowing La Villa to retain maximum ripe red fruit.
