Elgin has traditionally been known as the place in South Africa where apples come from: apples and pears are intensively grown there. In recent decades it has also been discovered that the cool region is ideally suited for the production of grapes and elegant quality wines.
Richard Kershaw is one of the champions of the area. He has made it his personal mission to show the world that Elgin does not just produce beautiful wines, but has the potential for world-class wines. Think grand cru Burgundy level. He does this through his Deconstructed series: very exclusive wines from one clone, soil and plot.
This Chardonnay is made from the Burgundy clone CY96, planted in the Lake District, the western part of Elgin. The soil here, called Cartref, consists of a mixture of granite, pebbles and quartz and gives the wine a delicate and fruity character. After the manual harvest, spontaneous fermentation and maturation follow in new and used French oak barrels.
The end result is downright impressive and can indeed easily compete with the better Chardonnays from Burgundy. Preferably drink this special wine at the table, with creamy fish or poultry dishes. Pour it into Burgundy glasses for an optimal taste experience.
