Description
Every year, winegrowers in the Limoux region of southern France organize a gastronomic festival where proceeds from wine sales benefit the restoration of the church in the hosting village. This event, hosted by a top chef—awarded three Michelin stars—has become a phenomenon in culinary circles.
The wines from the different terroirs (regions) are bottled separately. The Océanique terroir boasts the cooler vineyards, meaning the grapes ripen almost two weeks later than elsewhere. This gives this wine a Chablis-like character. After harvest, the wine ferments and matures for nine months in small oak barrels. Despite this, the oak aroma and flavor are perfectly balanced.

Tasting note
A fresh and aromatic Chardonnay with hints of flint, toast, and oak. The palate is full, rounded, and refreshing, with a lingering finish.
Shelf life
Drinkable from two years of age, easily keeps for four to five years after harvest.
