Description
The Thörle brothers continue to amaze us. Besides their talent for creating beautiful Burgundy wines, they also have a knack for natural wine! This Grauburgunder Natural is their first and an instant hit.
Johannes and Christoph harvest the grapes by hand in one of their finest Grauburgunder vineyards, just above Grand Cru Hölle. Thanks to the southern exposure, the grapes can ripen perfectly here.
Once in the cellar, a unique winemaking process follows. The grapes are destemmed and crushed, and they ferment spontaneously with the yeasts present on the grapes. Unlike when making white wine, the skins remain with the juice, giving the wine a beautiful orange-pink color and more structure.
Just before the end of fermentation, the grapes are pressed. The wine then matures for another ten months with the yeast residue in large, used oak barrels. Finally, the brothers bottle the Natural without filtering or adding sulfites. Purely natural!
It won't surprise you that this method produces a unique wine, difficult to compare with others. The Natural has a distinctive aroma, with notes of grapefruit, mandarin, rosehip, and pepper. The flavor is full and pronounced, with a remarkable structure thanks to the skin contact. This also makes it a wonderful table wine. Highly recommended for wine adventurers and natural wine enthusiasts!
