Beautiful dry white wine with the characteristic aroma of fresh buxustonen, citrus and beautiful toast flavors. The taste is dry and fresh in structure and ends with a fragrant and persistent aftertaste.
The Spanish Castelo de Medina is known as a producer of modern fresh white wines with an expressive aroma and taste. Excellent quality and quality rueda. Wine maker Sara Román got a green light a few years ago to make two wines that rise above the level of 'ordinary' rueda. The verdejo vendimia seleccionada best Spanish white wine at the Mundus Vini competition in 2014 we introduced earlier. The impressive sauvignon vendimia seleccionada is now available. For this wine, Sara selected the oldest vineyards with sauvignon grapes and reduced the yield drastically. This was done by a strict pruning method and a green harvest up to 30% of the amount allowed for rueda. She also made a selection of the most mature and healthy grapes during the harvest. After the picking and temperature-controlled fermentation, a maturation of about eight months followed on yeast cells. This originally French wine technique ('sur lie') is now used worldwide and creates more complexity and taste. Maturing on yeast only works out positively when the harvested grapes are in perfect condition, optimally ripe and without fungi. Hence the strict selections in the vineyard. And you can clearly taste that in this special dry white sauvignon: great taste refinement and length. This wine can even mature for several years in a bottle. Highly recommended.
