A French white wine with a minerally, fresh, and fruity aroma and a powerful, crisp, dry flavor. Delicious with fish—baked or oven-baked—delicious poultry like guinea fowl, or salads with goat cheese.
Domaine Michel at its best
Thierry and his son, Sébastien Redde, are among the top Sauvignon blanc winemakers in the Loire Valley. They produce their wines on one of the finest terroirs in Pouilly-Fumé. From the La Moynerie vineyard, Redde crafts an exquisite varietal Sauvignon.
This cuvée is considered the estate's benchmark quality. The wine is made from grapes grown on flint-bearing (silex) and calcareous-clay soils.
Redde works naturally in the cellar, meaning he doesn't add yeast cultures or enzymes. After fermentation, the inactive "wild" yeast cells remain in contact with the wine for a considerable time, resulting in an extra round and full flavor. The result is a top-quality Pouilly-Fumé that can age for extended periods, depending on the vintage style.
