Verdejo from Old Vines
Smooth, dry white wine with a pleasant aroma of yellow fruit, melon and a light toast aroma. Soft, round taste. Delicious as an aperitif, but also with cold and warm fish dishes.
Spontaneously fermented Verdejo
The Rueda wine region has given the verdejo grape international fame. But also in other Spanish wine regions beautiful and aromatic white wines are made from this special and recognizable grape variety.
Winemaker Juan Pablo Bonete of Bodegas Piqueras in southern Almansa sets a striking example. His verdejo grapes come from organically cultivated plots at an altitude of 700 meters. They are harvested at night and therefore transported to the cellar as cool as possible.
Fermentation starts spontaneously, with natural yeasts from the vineyard - hence the name Wild Fermented Verdejo. Both fermentation and two months maturation on the lie take place in lightly toasted 300-liter casks made of luxury French oak from the Allier.
This is followed by another six months maturation in large steel tanks, where the wine also remains in contact with the lie. The result? A beautiful full wine with a ripe taste and a beautifully dosed oak nuance.
