Description
Henri Bonnaud is one of only five producers in one of France's smallest and oldest appellations: Palette. The southern French winery has been managed since 1996 by Stéphane Spitzglous, who grew up on his grandfather's estate and eventually took over the winery from him.
Because Palette itself totals a mere 43 hectares, expansion is not really possible here. That is why, in addition to his vineyards in Palette, Stéphane also cultivates 15 hectares of vineyards in the neighboring Provence Sainte-Victoire, at the foot of the mountain of the same name. Just as in Palette, he does so organically.
After the harvest, Stéphane destems and crushes the Cinsault and Grenache grapes. Before pressing the grapes, he leaves the skins with the juice for a few hours. This gives the wine its beautiful light pink hue. After pressing, Stéphane ferments the juice into wine in stainless steel tanks.
It produces a remarkably refined Provence rosé. The wine has a subtle aroma, with notes of raspberry, peach, and anise. The taste is elegant and juicy, with a lively freshness and subtle spiciness. A delicious rosé for an aperitif, but it is also great with a variety of Mediterranean dishes. Highly recommended!
