Description
Domaine de Panisse is the recently acquired estate of Marilou and Axel Vacheron, fourth-generation winemakers of the renowned Châteauneuf-du-Pape estate Clos de Caillou. They have the extensive experience of Caillou's winemaker, Bruno Gaspard, in their DNA, but Marilou and Axel see it as a challenge to make their own mark on this small, beautiful estate, located less than a kilometer from Caillou.
The planted Grenache, Syrah, Mourvèdre, and Cinsaut grapes are grown organically and harvested at a very low yield in the vineyard, allowing the wines to express their terroir to the fullest. For the Côtes du Rhône le Mazet, this is only 30 hectoliters per hectare.
After the Syrah (60%) and Greanche (40%) grapes are hand-picked, complete destemming and fermentation take place in concrete vats. The wine then matures for 14 months in large wooden barrels, not intended for oak aromas and flavors, but for a gradual development of aromas and tannins. The result is an exceptionally fine red wine that far exceeds its appellation.
Drinking at
A sun-drenched, southern French red wine perfect for enjoying on its own or pairing with spicy dishes. Delicious with tender chicken or turkey stews, hachee, or bean gratin.
Tasting note
A characterful red wine with a sultry aroma of cherry, plum, fig, thyme, and juniper. The palate is full and juicy with balanced acidity and mild tannins. Notes of toast and Provençal herbs emerge on the finish.
