Description
Gigondas. That is what it is all about at Domaine la Bouïssière. Understandably so, as brothers Thierry and Gilles Faravel own arguably the most beautiful and breathtaking vineyards in the appellation. They are situated at the foot of the small but rugged (and indeed tooth-shaped) Dentelles de Montmirail mountain range, at an altitude of no less than 300 to 500 meters. The wild terrain is so steep that part of the vineyards has even been laid out in terraces.
It yields a unique terroir for equally unique wines. The soil is actually a millennia-old seabed, pushed up during the formation of the Dentelles. The vineyards face northwest, making it cooler here than in many other vineyards in the appellation. This ensures a balanced freshness in the wine. Finally, wild garrigue grows between the vines, which also leaves its mark on the spicy character of the Gigondas.
Naturally, the wines do not owe their exceptional quality solely to the terroir. Gilles cares for the old vines with great attention. His working method is organic, although the estate is not certified. The grapes (Grenache and Syrah) are carefully harvested by hand. In the cellar, Thierry is at the helm. His approach is classic and minimalist. Notably, he works extensively with whole bunches rather than just destemmed grapes, which, in his view, creates more tension in the wine. Aging takes place in used oak barrels.
The result is a stunning Gigondas, which undoubtedly ranks among the best of the region. It is full-bodied, concentrated, and powerful, yet the freshness, tension, and juiciness ensure that the wine never becomes cloying or heavy; the typical Bouïssière signature. A magnificent wine with many years ahead of it.
Drinks with
Powerful, full-bodied red wine to drink with grilled dishes and stews. Excellent with sirloin steak with grilled aubergine and courgette, spicy spare ribs, or young, hard cheeses.
Tasting note
Purple-red wine with a refined aroma of plum, blackberry, cherry, leather, and clove. Luscious and rich on the palate with jammy fruit, powerful tannins, and balanced acidity. Enormous length of finish with bay leaf and toast.
Shelf life
Drink from 3 years; keeps for approximately 12 years after the harvest.
