It is not always necessary to reinvent the wheel yourself. The young Sébastien Dampt understood this all too well. It is precisely with this approach that he is one of the new generation of winemakers who is putting Chablis back in the spotlight. Winemaking is done here as in the olden days: traditional and unadorned. As simple as that approach may sound, the result is so impressive.
The roots of the Dampt family go back 150 years in the winemaking history of Chablis, the northernmost part of Burgundy. For generations, the Dampts have specialized in the modest, chalk-dry and slender Chardonnay style that is so typical of the region. So Sébastien was taught the profession from scratch. After training in Beaune, he gained experience at home and abroad. In 2007 he started his own domain, by now tried and tested.
Sébastien harvests the grapes for his Chablis Villages from several plots, the largest of which has 45-year-old vines. The vinification is then minimalist: after pressing the grapes, the wine ferments and matures in stainless steel tanks. This not only provides the refined, fully dry Chablis character, but also a light flint aroma as a sign of terroir expression in the wine.
This is Chablis as Chablis is meant to be. Bone dry, chalky and with notes of granny smith apple and citrus fruits. Delicious as an aperitif, or with oysters and light fish dishes.
Shelf life
To drink from one year after harvest and can easily be kept for up to four to five years.
