Description _

Gigondas. That's what it's all about at Domaine la Bouïssière. Logical, because brothers Thierry and Gilles Faravel possess perhaps the most beautiful and breathtaking vineyards in the appellation. They are located at the foot of the small but rugged (and indeed tooth-shaped) Dentelles de Montmirail mountain range, at an altitude of no less than 300 to 500 metres. The rugged terrain is so steep that some of the vineyards are even laid out in terraces.

It produces a unique terroir for equally unique wines. The bottom is actually a millennia-old seabed, pushed up during the formation of the Dentelles. The exposure of the vineyards is northwesterly, making it cooler here than in many other vineyards in the appellation. This ensures a balanced freshness in the wine. Finally, wild garrigue grows between the grape vines, which also puts its stamp on the spicy character of the Gigondas.

Of course, the wines do not owe their exceptional quality solely to the terroir. Gilles takes great care of the old sticks. His working method is organic, although the domain is not certified. The grapes (grenache and syrah) are carefully harvested by hand. Thierry is at the helm in the basement. His working method is classic and minimalist. What is special is that he often works with whole bunches instead of just destemmed grapes, which he believes creates more tension in the wine. Maturation takes place in used oak barrels.

The result is a stunning Gigondas, which is without a doubt one of the best in the region. It is full, concentrated and powerful, but the freshness, tension and juiciness ensure that the wine does not become cumbersome or heavy at any time; the typical Bouïssière signature. A beautiful wine, with many years ahead of it.

 

Drink with

Powerful, mouth-filling red wine to drink with grilled dishes and stews. Great with sirloin steak with grilled eggplant and zucchini, spicy spare ribs, or young, hard cheeses.

Tasting note

Purple-red wine with a refined scent of plum, blackberry, cherry, leather and cloves. Sultry and rich in taste with jammy fruit, powerful tannin and balanced acidity. Enormous flavor length with bay leaf and toast.

Shelf life

Drink from 3 years of age; shelf life of approximately 12 years after harvest.
