A Greek dry white wine with a spicy, herbal aroma and a strong, fresh flavor. Made from Assyrtiko grapes. Delicious with grilled fish or shellfish.

Description

Gaia Estate is a unique wine estate with production in Nemea and Santorini, owned by two progressive Greeks, Yiannis Paraskevopoulos and Leon Karatsalos. The high-quality technical input comes in part from Yiannis, who graduated from the Wine University of Bordeaux. Along with Leon, an agricultural engineer, he is among the best wine producers in Greece.

The Assyrtiko from the island of Santorini is a rarity. The very old vines grow on volcanic soil bordering the sea, protected from the harsh sea winds by their crooked trunks. Gaia uses only wild yeasts for fermentation. After a cool start to fermentation, the wine is fermented traditionally at a higher temperature.
