Montepulciano d'Abruzzo
Appassimento is the Italian term for the process of drying grapes used to produce highly concentrated or sweet wines. Appassimento wines are particularly famous for wines like Amarone and Ripasso, but the method is used throughout the country.
Our organic Abruzzo estate, Collefrisio, recently produced an impressive Appassimento. The wine is made primarily from Montepulciano, the region's blue grape, supplemented with some Sangiovese and Merlot.
The grapes are harvested later, allowing them to dry slightly on the vine. Once picked, the skins remain with the wine longer during fermentation, enhancing the color and flavor intensity. Finally, the wine is aged in stainless steel tanks.
Like an Amarone, this Appassimento is also very ripe, powerful, and concentrated. Enjoy it with hearty dishes like game or stews, or simply by the fire on cold winter evenings.
