Extra Brut Champagne
A spicy and complex Champagne, deep yellow in color with a fresh and persistent mousse. The aroma ranges from ripe apple and citrus notes to nuances of oak and fresh herbs. The taste is powerful, crisp and dry, and has a long, balanced finish.
Blancs Réserve, Chardonnay
Erik de Sousa produces the Cuvée Mycorhize from 100% Chardonnay grapes sourced from three different Grand Cru vineyards in Avize. These biodynamically cultivated plots are located in the Grand Cru Côte des Blancs, featuring vines over 50 years old. Erik works the soil with a horse, thus avoiding the compaction of the soil by a heavy tractor, which reduces the amount of air and biological life present. After the first, natural fermentation, the wine is transferred to 225-liter oak barrels (15% of which are new). This is followed by a three-year maturation period in pupitres, allowing fine aromas (brioche) to develop. The dosage is only 3 grams per liter. It is an exclusive, high-quality terroir Champagne with a very limited production of just 1,212 bottles.
