Tasting note De Sousa Champagne
A spicy and complex Champagne, full in color with a fresh and persistent mousse. The aroma varies from ripe apple and citrus notes to nuances of oak and fresh herbs. The taste is strong, soft-dry and has a long, balanced aftertaste.
Erik de Sousa makes the Cuvée Mycorhize from 100% chardonnay grapes from 3 different grand cru vineyards in Avize. These biodynamically processed plots are located in the Grand Cru Côte des Blancs, with more than 50 years old sticks. Erik works the ground with a horse and in this way avoids a heavy tractor compressing the soil and therefore containing less air and biological life. After the first natural fermentation, the wine is transferred to 225 liter oak casks (15% new). This is followed by a 3-year maturation in pupitres, creating beautiful aromas (brioche). The dosage is only 3 grams per liter. It is an exclusive, high-quality terroir-Champagne with a very limited production of only 1212 bottles.
