Extra Brut Champagne
A spicy and complex Champagne, full yellow in color with a fresh and persistent mousse. The aroma varies from ripe apple and citrus notes to nuances of oak and fresh herbs. The taste is strong, fresh dry and has a long, balanced finish.
Blancs Réserve, Chardonnay
Erik de Sousa makes the Cuvée Mycorhize from 100% chardonnay grapes from 3 different grand cru vineyards in Avize. These biodynamically cultivated plots are located in the Grand Cru Côte des Blancs, with more than 50 years old canes. Erik works the soil with a horse and thus prevents a heavy tractor from compressing the soil and therefore containing less air and biological life. After the first, natural fermentation, the wine is transferred to 225 liter oak casks (of which 15% new). This is followed by a maturation of 3 years in pupitres, resulting in beautiful aromas (brioche). The dosage is only 3 grams per liter. It is an exclusive, high quality terroir Champagne with a very limited production of only 1212 bottles.
