Refined dry white wine with nuances of floral and slightly fruity notes and some dairy. The taste starts fresh and juicy and develops in a balanced way with a fresh and persistent aftertaste.

Description

Patrick Piuze may be a relative newcomer in Chablis (he started his domain in 2008), but this Canadian-French winemaker has become an indispensable member of the elite of Chablis producers. What is special is that Piuze does not own his own vineyards, but his buys grapes from various producers in the region. Only grapes from old vines from the most beautiful Chablis vineyards are considered for his wines. The Terroir series is a special project: while most producers choose to blend their various vineyards, terroir freak Piuze is focused on doing as much as possible showcasing the individual character of certain vineyards within the appellation. He produces Chablis from various villages on the Chablis plateau. One of those villages is Chichée, a village just southeast of the village of Chablis. The grapes come from limestone soil and are harvested by hand, which is quite exceptional in Chablis. The fermentation takes place spontaneously, in stainless steel tanks. The wine then matures on the yeasts, also in stainless steel. It gives a super classic Chablis, with citrus and green apple, salty minerality and beautiful tension. The perfect aperitif!
