Chateauneuf du Pape Blanc

Châteauneuf-du-Pape is almost always red, only one in sixteen bottles is white. This makes white Châteauneuf a very exclusive white wine. If it is also from top producer Le Clos du Caillou, the party is complete.

Les Safres is a blend of white Rhône grapes Grenache Blanc, Clairette and Roussanne from vines that are on average 40 years old. The grapes come from the lieux-dits Pignan and Bédines. The soil here consists of various types of sand, including 'safres', the local name for a compact, sandy terroir. It is this soil type that provides finesse in the wine.

The grapes are harvested by hand and carefully sorted. The fermentation takes place in small wooden barrels. A small number of these barrels are new, the vast majority are used. After fermentation, several months of maturation follow, also in small wooden barrels.

Although there is little available, we would like to urge you to try and get your hands on a bottle of this special white wine. Les Safres is lush, complex, tropical and very gastronomic. Think of delicious dishes such as sweetbreads, morrilles, or truffle. To get the most out of the wine, we advise you to decant it before serving.
